Not your Mama’s Chicken Salad
Ingredients
2 Cans white meat chicken (I like Costco’s brand,
Guacamole Mix (Mild),
½ diced Bell pepper,
2 avocados cut into chunks,
1 small onion diced,
1 bunch of green onion chopped,
Handful of dried cranberries,
2 stocks of celery,
Apple (Optional),
Pecans or walnuts (optional)<
3 TBS Lime juice,
Salt and pepper to taste;
Directions: So easy just drain chicken and put all ingredients in large bowl, stir add salt and pepper to taste. You may need to add additional lime juice if it looks a little dry. You can serve in lettuce leaf wraps, on crackers or just by its self.
